豪州仕込みの体に優しい酵母パン
新代田の人気デリ「DAITA STORE」が、日本ではまだレアなサワードゥブレッド専門のベーカリーをオープン! ベイカーの太田翔一朗さんは学生時代に訪れたオーストラリアの豊かな食文化が忘れられず勤め先を退職し、ゴールドコーストでパン職人の道へ。サワードゥ酵母で作るパンはうまみがぐっと引き出され、ふわふわの食感。さらに消化しやすいのも魅力だ。現地仕込みの酵母にアレンジを加え、マイルドな酸味に仕上げたパンは料理にも合わせやすい。シンプルなのに記憶に残る味わいは、毎日欠かせなくなりそう。

Healthy yeast bread from Australia

The popular deli DAITA STORE in Shindaita opened this new bakery specialized in sourdough bread, which is rare in Japan yet! The baker Shoichiro Ota visited Australia when he was a student, and he was impressed by their rich food culture. He quit his work to study baking in the Gold Coast. Their sourdough starter makes the bread fluffy and full of umami. It is also easy to digest and nice to your stomach. The sourness is made subtle by adjusting the yeast from Australia.  They are simple yet unique. You would miss them every day.

White (¥900). The yeast keeps proving the bread even after being baked and the flavor changes over time. The bread tastes good after a couple days, too. Walk and enjoy the retro vibe of old Tokyo.
